First, the contents are fully heated to kill all the microorganisms; at the same time, the cans are fully pasteurized; then the sterile food is filled into a sterile container and sealed with heat. Finally, it is heated and sterilized. After cooling, the volume of air in the headspace of the container shrinks, and negative pressure is generated. The originally sealed bottle will not open anymore, and bacteria outside will not be able to enter.

"The food will not corrupt naturally, so there is no need to add any preservatives," Fan Zhihong said.

Canned food does not lack potassium, calcium, magnesium

According to Fan Zhihong, the heating temperature of canned food does not exceed 120 degrees, and only a small amount of free amino acid is lost. However, protein is not afraid of heating at this temperature, just as home pressure cookers can be used to make braised pork. Minerals are not afraid of heating. The contents of potassium, calcium, and magnesium are not reduced by sterilization. In fact, the only real fear of heat is vitamins, especially vitamin C and folic acid.

Canned fish contains 10 times more calcium than fresh fish

The high-temperature and high-pressure heating makes the fish bones become soft and soft, so that a large amount of calcium is dissolved out. Therefore, the calcium content of canned fish increased more than 10 times than that of fresh fish, and iron, zinc, iodine, selenium and other minerals were not lost. However, Fan Zhihong reminded that it is best not to eat more than two boxes of canned fish every week.
